Pistachio tiramisu

I don’t know about you, but I love pistachios. This cake is perfect regardless of the season, it’s easy and fast to prepare and doesn’t require baking. And let’s not mention: the assembly and preparation are like a walk in the park.

Ingredients: (for a 20/20 cm tray – 8 servings)

  • 50 g raw pistachios (shelled and unsalted)
  • 200 ml sweetened condensed milk
  • Ladyfingers biscuits or Naples biscuits (special biscuits for tiramisu)
  • 250 g mascarpone cheese
  • 150 ml cooking cream (or whipped cream)
  • 250 g pistachio cream (pistachio paste)
  • 2 teaspoons vanilla essence
  • 1 teaspoon pistachio essence
  • coffee prepared without sugar and without milk (cold)
  • optional: a few drops of green food coloring if you want to decorate the top with this marbled effect

Preparation:

Chop the pistachios with a knife and set aside.

In a large bowl, put the cream and mix on high speed until it doubles in volume and becomes stiff. Then, add the pistachio cream and mix until it is well incorporated.

Then, add the condensed milk and mix for another minute. Add the mascarpone cheese, vanilla & pistachio essence and mix until everything is combined and you have obtained a homogeneous cream.

Prepare the tray, the biscuits and the coffee.

Dip each biscuit in the coffee for a few seconds on both sides, then place them side by side in the tray. Add half of the cream and spread it evenly over the first layer of biscuits, using a spatula.

Sprinkle half of the ground pistachios evenly over the cream.

Proceed in the same way with the 2nd layer of biscuits, quickly pass them through the coffee and place them neatly over the cream. On top, put the rest of the cream and level it nicely. Sprinkle the rest of the ground pistachios on top.

*I put aside some cream at the beginning, to which I added a little green food colouring, and then I decorated it as you see in the pictures. If you don’t want to complicate things, just sprinkle the rest of the pistachios on top. It will look very nice anyway. You can also decorate with some mint leaves or forest fruits.

Place in the refrigerator for at least 5 hours (ideally overnight) and enjoy it with friends and family the next day.

A delicious dessert made without so much effort or hassle.
