Salmon soup (inspired by the Finnish soup Lohikeitto)

Cold winter days seem easier to ignore when you have some delicious soup on the table. It goes straight to your heart and warms you like a tight hug. 😀

Ingredients: (for 6 servings)

  • 700-800 g salmon (I had frozen, you can also use fresh)
  • a bunch of dill
  • 2 pieces of leek
  • 4 medium carrots
  • 6 medium potatoes
  • 3 cubes of soup concentrate
  • 2 l of water
  • 300 ml of cooking cream
  • 80 g of butter
  • salt + pepper

Preparation:

Peel and wash the leek and cut it into equal slices. Peel the carrot and cut it into equal slices. Peel the potatoes and cut them into cubes. Cut the salmon into pieces about 4-5 cm each.

In a large pot, put the butter and when it has melted, add the leek. Sauté for about 5 minutes. Then add the carrots and potatoes and mix well.

Add the water and the soup concentrate cubes, mix well and let it simmer for about 20-25 minutes (or until the carrots and potatoes are almost cooked). Then add the cooking cream and pepper, mix and bring to a boil.

Add the fish and cook for about 5 minutes. Add the chopped dill, stir and turn off the heat.

You can also serve it with lemon slices or lemon juice if you like.
