
If you’re looking for a fun, fresh, and totally delicious vegetarian dish, these zucchini rolls with cheese are a winner! Think soft, thinly sliced zucchini wrapped around creamy, melty cheese. I used smoked sheep’s cheese in this version, which gives the rolls a lovely kick, but the beauty of this recipe is that you can use ANY type of cheese you like. Cheddar? Goat cheese? Mozzarella? The world (and your taste buds) are your oyster!
This dish is perfect as a light lunch, a snack, or even as an appetizer for your next get-together. You can also make it your own by adding herbs or spices to the filling. Whether you keep it classic or get creative with your cheese choices, these zucchini rolls are sure to impress.

Ingredients:
- 4 zucchinis
- ~ 500-600 grams of smoked sheep’s cheese
- Salt + pepper
- Olive oil
- Honey and mustard in the desired amount to make the dressing (I used 2 tablespoons of honey and 5 tablespoons of mustard, but you can adjust to your taste if you prefer it sweeter or with more mustard).

Prepare the zucchini by slicing them lengthwise, discarding the ends. Drizzle olive oil on both sides of the slices and season with salt and pepper. Place the zucchini slices on a grill and cook them until they are golden brown. Once done, transfer them to a bowl and allow them to cool. Next, place the cheese in a bowl, and for each grilled zucchini slice, spoon a generous tablespoon of cheese onto it. Roll the zucchini up and secure with a toothpick.

Continue this process until all the zucchini slices are rolled up. For the dressing, simply mix together the honey and mustard.
Serve them chilled, drizzled with the dressing on top. They’re absolutely delicious! Perfect as an appetizer or a side dish.
