Ingredients (For 2 servings):
5 small eggs
6 tablespoons Greek yogurt
1 teaspoon dried dill
1 small pickled cucumber
1 tablespoon sweet mustard
1 sprig of parsley
Salt + pepper
Preparation:
Place the eggs in boiling water and cook them until hard-boiled.
In a bowl, combine the yogurt, mustard, dill, and finely chopped pickled cucumber. Season with salt and pepper to taste.
Finely chop the parsley and set it aside. Prepare two plates, divide the yogurt sauce evenly, and spread it as a base on each plate. Top with the boiled eggs, then sprinkle with a bit of pepper and parsley to taste.
