Creamy Broccoli Soup – Vegetarian

Who knew a bunch of broccoli could turn into something this cozy and delicious?

This Cream of Broccoli Soup is the ultimate feel-good bowl: warm, creamy, and loaded with veggie goodness, minus the fuss.
It’s vegetarian, healthy, and made with just a handful of ingredients (most of which you probably already have). Perfect for a quick lunch, a light dinner, or just when your body is saying, “hey, maybe let’s have something green today.”

Ingredients:

  • 3 medium broccoli heads
  • 100 g butter
  • 400 ml coconut milk
  • Half of a medium celery root
  • 1 small head of garlic
  • A few sprigs of fresh thyme
  • 2 leeks
  • 3 medium carrots
  • 2 liters vegetable stock (or made from 4 bouillon cubes boiled in 2 liters of water)
  • 2 green onions + sesame seeds for garnish

Preparation:

Clean and slice the leek. Peel and cut the celery and carrots into medium-sized cubes. Peel the garlic and slice it thinly.

In a large pot, melt 60 g of butter. Once melted, add the leeks, carrots, and celery. Sauté for 7–8 minutes, or until the vegetables are nicely softened. Add the sliced garlic and cook for another minute, stirring frequently.

While the veggies are cooking, separate the broccoli florets from the stems, place them in a bowl, and rinse them thoroughly under cold water.

After the garlic has cooked for about a minute, add the broccoli and vegetable stock to the pot. If needed, top up with water so that all the vegetables are fully covered. Bring to a boil and cook until the broccoli is tender.

Once the broccoli is cooked, remove about two-thirds of the liquid and set it aside in a bowl. Using an immersion blender, purée the vegetables in the pot until smooth. Then, stir in the coconut milk, the remaining butter, and finely chopped thyme. Season with salt and pepper to taste, and blend again until the soup is creamy and well combined.

Gradually add back some of the reserved stock while blending, until you reach your desired consistency.

Top with finely chopped green onions and a sprinkle of sesame seeds before serving.
