Ingredients (for a standard baking tray):
- 5 medium zucchinis
- 400 g feta cheese
- 100 g Grana Padano cheese
- 200 g mozzarella
- 100 g Gorgonzola
- 6-7 tablespoons Greek yogurt
- 2-3 green onions
- 4 garlic cloves
- 1 tablespoon dried dill

Wash the zucchinis and cut them in half lengthwise (I had two larger ones, so I first cut them in half and then into quarters). Use a spoon to scoop out the seeds.

When we’re done with the zucchini, set them aside. In a bowl, mix the grated cheese with pepper, dill, olives, yogurt, finely chopped onion, and peeled and finely chopped garlic.

Preheat the oven to 180°C. Line a baking tray with parchment paper and evenly fill each zucchini with the cheese mixture. Season with salt and pepper, then bake in the preheated oven for 30 minutes. For a golden finish, bake for an additional 4–5 minutes with heat only from above.

These cheese-stuffed zucchinis are simple to prepare and make a delicious option for lunch or dinner. 🙂
