

This quinoa salad is packed with protein and flavor, combining fluffy quinoa with succulent, spicy shrimp. A healthy and delicious dish!
Ingredients: (for 3 portions)
- one medium red onion
- 200 g quinoa
- 800 g shrimp (I had frozen)
- 30 g butter
- Mix of spices: one tablespoon of garlic powder, one tablespoon of onion powder, one teaspoon of chili flakes, one tablespoon of smoked paprika, a little salt and a little pepper
- Dressing for the salad made from: 30 ml olive oil, 15 ml balsamic vinegar, one teaspoon of dried oregano, one teaspoon of plain mustard, 5 crushed garlic cloves, salt and pepper
- 20 cherry tomatoes
- 4 small cucumbers

Preparation:
In a frying pan or wok, put in the butter. When it is melted, add the cleaned and washed shrimps, along with the spices.
In a separate pot, boil the quinoa according to the instructions.

Mix well and cook over high heat for about 8-10 minutes or until the liquid has almost evaporated.

Wash and cut the vegetables: tomatoes in half, cucumbers in cubes, and finely chop the onion.
When the quinoa is cooked, drain well.
Add the chopped vegetables to a bowl along with the cooked quinoa.

In a bowl, using a fork, mix together all the ingredients for the dressing.
Add the dressing to the quinoa and vegetables and mix until the dressing is well incorporated.

When the shrimps and salad are ready, transfer them to bowls or plates. You can garnish it with fresh mint leaves or chopped parsley. Season with salt and pepper if needed and serve.
