

This carrot, parsnip, and cheese tart is a delightful vegetarian dish that combines the natural sweetness of roasted carrots and parsnips with the savory richness of melted cheese. Wrapped in a crisp, flaky pastry, each bite offers a perfect balance of flavors and textures. It’s a deliciously satisfying option for lunch or dinner.
Ingredients: (for a tray of ~28 cm diameter / ~4 servings)
- 1 sheet puff pastry
- 250 g mascarpone (you can also use ricotta)
- 200 g feta (you can also use any white cheese)
- 2 large parsnips
- 8-10 medium carrots
- 80 g butter
- grated zest of one lemon
- juice of half a lemon
- salt + pepper
- a tablespoon of herbes de Provence
- a tablespoon of garlic powder
- fresh mint
- mixed nuts/seeds
- 2 eggs

Preparation:
Peel the carrots and parsnips and then cut them in half lengthwise. Cut them into equal & not very thin strips.

In a large wok, add the butter, and when it is melted, add the carrots and parsnips, salt, pepper, herbes de Provence, and garlic powder. Mix well and cook over medium heat until they are well-browned and have started to soften. Finally, before turning off the heat, sprinkle them with lemon juice and mix well.

Meanwhile, prepare a baking tray with a removable bottom. Line it with baking paper and place the dough. In a bowl, mix the mascarpone with an egg and the grated lemon zest. Transfer the mixture to the tray over the dough and level it well with a spatula.

Add the diced feta cheese and fresh mint leaves. Turn the oven on to 210 degrees and let it heat up. Add the carrot and parsnip strips over the cheese, one next to the other, until the entire surface of the tart is covered.

Fold the remaining edge of the dough over the tart. Beat the second egg in a bowl and, using a pastry brush, brush the dough on the edge and the carrots on top. Place nuts or seeds on the edge of the tart.

Bake in the preheated oven for ~40 minutes or until the carrots and dough are nicely browned. Serve with fresh mint sprinkled on top.
