

If you’re craving something rich, fudgy, and irresistibly chocolatey, this moist brownie is exactly what you need. Packed with deep cocoa flavor and a soft, melt-in-your-mouth texture, each bite is pure indulgence. To take it to the next level, I’ve topped it with golden, lightly toasted cashew pieces that add the perfect crunch and a hint of nuttiness. Whether you serve it warm with a scoop of ice cream or enjoy it as a midday pick-me-up, this brownie is guaranteed to satisfy your sweet tooth!
Ingredients: (for a 28 cm pan)
- raw unsalted cashews
- 230 g dark chocolate (preferably, you can also use milk chocolate)
- a little salt (a pinch)
- vanilla essence
- 120 g butter at room temperature
- 150 g brown sugar
- 3 large eggs
- 25 g cocoa powder
- 80 g flour

Preparation:
Place the butter and chocolate in a saucepan and melt them together over low heat, stirring constantly. Be careful not to let the mixture boil. Once fully melted and smooth, remove from heat and pour into a large mixing bowl.

Preheat the oven to 180°C and allow it to heat up. In a mixing bowl, beat the sugar briefly using a mixer—just enough to break it up, but not too much. Add the eggs one at a time, mixing lightly after each addition. Stir in the salt and flour, mixing just until combined. Next, add the vanilla extract and cocoa powder, and mix again briefly until everything is well incorporated. Be careful not to overmix the batter.

Pour the batter into a baking tray lined with parchment paper. Roughly chop the cashews with a knife and sprinkle them evenly over the top.

Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
Allow the brownie to cool completely before slicing and serving.
You can dust the top with powdered sugar if you like, though I personally skipped it—I prefer to enjoy the rich, pure chocolate flavor just as it is. 🙂
