Spaghetti with tomato sauce (Vegan)

These spaghetti with aromatic tomato sauce are the perfect choice! They’re incredibly easy to make, bursting with flavor, and completely vegan.

With just a few basic ingredients, you can whip up this delicious dish in no time, making it perfect for busy days when you want something both tasty and wholesome. The rich, aromatic tomato sauce pairs perfectly with the spaghetti, creating a meal that’s both comforting and full of fresh flavors. Simple, yet so satisfying!

Ingredients (for 2 large or 3 medium servings):

  • Olive oil
  • 250 g spaghetti
  • 2 cans of tomatoes (2 x 400 g)
  • 5-6 cloves of garlic
  • 2 medium onions
  • 2 tablespoons tomato paste or broth
  • 2 tablespoons sugar
  • A bunch of fresh parsley
  • A few sprigs of fresh basil
  • Salt and pepper to taste

Preparation:

Slice the onion and thinly cut the garlic.

In a wok, heat a little olive oil, then add the onion. Sauté for a few minutes until softened, then add the garlic and cook for about a minute. Next, add the tomatoes and broth, stir well, and let the sauce simmer and reduce for 5–7 minutes over medium heat. Meanwhile, cook the pasta al dente, drain, and set aside.

Once the sauce has reduced, stir in the chopped parsley and sugar, bring it to a boil again, then remove from the heat. Add the pasta to the sauce and toss to combine. Season with salt and pepper to taste.

Place on a platter, and sprinkle fresh basil leaves on top.
