That’s exactly what this chickpea dish with spinach and mushrooms is all about: simple, quick, and full of flavor. Ingredients:
- 1 kg brown mushrooms
- 1 bunch of parsley
- 200 g fresh spinach
- 1 large onion
- 2–3 garlic cloves
- 1 small piece of fresh ginger
- 400 g coconut milk
- ~900 g crushed tomatoes or tomato juice
- 3 small cans of chickpeas
- 1 hot pepper
- A few tablespoons of olive oil
- Juice of half a lime
- Spice mix: 1 teaspoon turmeric, 1 teaspoon mustard seeds, 1 teaspoon ground fenugreek, 1 teaspoon curry powder
- Salt + pepper

Preparation:
Clean the mushrooms and slice them. Peel and slice the onion. Peel the garlic and slice it too. Grate the ginger finely. Rinse the chili pepper, remove the seeds, and finely chop it. Drain and rinse the chickpeas under cold water.
Heat the olive oil in a pot and sauté the onion for about a minute. Add the spices and cook for another few seconds, letting them release their aroma. Stir in the garlic and ginger, and sauté for another minute, stirring constantly. Next, add the mushrooms, season with salt and pepper, and cook for a few minutes, stirring occasionally. Add the chopped chili pepper and tomato sauce, stir well, and let it simmer for a few minutes to blend the flavors.

Next, add the chickpeas and coconut milk, and let everything cook together for a few more minutes, stirring occasionally. Then, stir in the lime juice and spinach, and let it simmer for a few more minutes. Turn off the heat and mix in the chopped parsley.
