

No matter how you choose to enjoy it – as a side, a light lunch, or straight from the fridge with a spoon – this green bean salad is ridiculously tasty and beyond easy to make. It’s one of those recipes that quietly becomes a favourite, even though it only takes a handful of ingredients and barely any effort.
I made mine up with homemade mayo (because I was feeling fancy 😎), but honestly, store-bought mayo works just as well. The green beans stay fresh and crisp, the mayo gives it that creamy comfort, and the whole thing just… works. Vegetarian-friendly and seriously satisfying!
Ingredients:
- 400 g fresh green beans (you can also use frozen)
- a few sprigs of fresh parsley
- a small head of garlic (I like dishes with a lot of garlic; if you’re not such a big fan, you can just put 2-3 cloves)
- ~250 g mayonnaise (store-bought or homemade, in the classic version, from 2 egg yolks, mustard, lemon juice to taste and enough oil)
- salt + pepper

Preparation:
Give the green beans a good rinse, then trim and cut them into bite-sized pieces. Pop them into a pot with a pinch of salt and just enough water to cover. Bring to a boil and cook until they’re tender but still are al dente, not mushy! You don’t want them overcooked or falling apart like in a stew — we’re going for that perfect, slightly crisp texture. 😊

Peel and crush the garlic, then rinse and finely chop the parsley.
Meanwhile, you can start preparing the mayonnaise. Make it using your own preferred recipe or get inspired from the internet, there are plenty of mayo recipes you can make.. Homemade mayonnaise is very easy to whip up, and personally, I find it a much better option than store-bought. That said, there are also some great ready-made options available. 😊

No matter which option you go with, the result will surely be delicious.
Once the beans are cooked, drain them, rinse under cold water, and leave them in a colander to cool and remove as much excess water as possible. After they’ve cooled, combine all the ingredients in a bowl – cooked and drained green beans, mayonnaise, crushed garlic, chopped herbs, and salt and pepper to taste – and mix everything thoroughly.
