


It’s rhubarb season, and you can already find strawberries in stores, so you have to try this delicious tart that is incredibly easy to prepare.
Ingredients: (For 12 servings / a tray of ~27 cm diameter)
*For the oat base:
- 130 g plain rolled oats
- 250 g brown sugar
- 90 g flour
- 1 teaspoon ground cinnamon
- 170 grams of butter (cut into cubes, at room temperature)
- 60 g coconut flakes
*For the filling:
- 500 g rhubarb
- 400 g strawberries
- 230 g brown sugar
- 60 g flour
- 1 teaspoon ground cinnamon

Preparation:
Wash the rhubarb and cut it into pieces of about 2-3 cm. Wash the strawberries, remove the leaves and cut them in half.
Turn on the oven to 190 degrees Celsius and let it heat up.

In a large bowl, put the fruits together with the rest of the ingredients for the filling and mix well with a spatula.

In another bowl, using your hands, mix all the ingredients for the oat base. Mix well until all the ingredients are well combined.

Prepare a tray with baking paper. Add 2/3 of the oat mixture and press well using your hands. Add the fruit mixture and sprinkle the remaining oat mixture on top.

Place in the preheated oven for 40-45 minutes.
Let it cool down and serve simple, with whipped cream or a large scoop of vanilla ice cream 💜
