

A cozy pumpkin soup with a refreshing twist of orange and apple.
It’s a perfect blend of sweet and savory, with the warmth of pumpkin and the bright notes of citrus and apple. A comforting dish, ideal for a crisp autumn evening.
Ingredients: (for 4 servings)
- 1 pumpkin of ~700 g
- 1 large apple
- an orange
- 2 carrots
- 3 cloves of garlic
- 3 shallots
- 2 cubes of vegetable stock
- a piece of ginger
- fresh parsley
- 70 g raw pumpkin seeds
- 1 l water
- pepper
- olive oil

Preparation:
Peel and seed the pumpkin, wash and cut into cubes. Cut the carrots into coarse pieces. Chop the onion coarsely. Peel the garlic. Peel and slice the ginger. Peel the apple and cut into cubes. Squeeze the juice from the orange into a bowl. Wash and chop the parsley.

In a soup pot, heat olive oil (about 20-30 ml), and once hot, add the onion, garlic, and ginger. Sauté for about 3 minutes, stirring frequently. Next, add the carrots and pumpkin, cooking for around 5 minutes, stirring often to prevent sticking. Then, pour in the water, add the apple cubes, orange juice, and soup cubes. Stir well, cover, and let it simmer for about 30 minutes.

Pour the soup into a blender and blend until smooth. Then, stir in the pepper, chopped parsley, and pumpkin seeds using a spoon or spatula. Taste and add salt if needed.

Serve it as is or with croutons. This delicious, autumn-inspired soup is budget-friendly, flavorful, and easy to prepare—perfect for those moments when you’re short on time or craving something warm and comforting on a fall evening. 🙂
