Caramelized onion and goat cheese tart – Vegetarian

This tart is incredibly delicious and surprisingly easy to make. It may take a bit longer to prepare, but I promise it’s totally worth the effort. 🙂

Ingredients: (for a 28 cm tray – ~ 8 servings)

  • 60 ml olive oil
  • 6 tablespoons balsamic vinegar
  • 5-6 tablespoons brown sugar
  • 200 g goat cheese
  • one egg
  • 1.5 kg red onion
  • One pizza dough
  • salt + pepper

Preparation:

Peel the onion, cut it in half, and slice it evenly. Heat olive oil in a large frying pan, and once hot, add the onion. Sauté for 15-20 minutes, stirring constantly, until the onion becomes soft and translucent. Next, add the sugar and vinegar, and cook over medium heat for another 20 minutes.

While the onion is cooking, preheat the oven to 180°C. Prepare a baking tray with parchment paper and place the dough on it. Bake the dough in the oven for 8-10 minutes. Once done, remove the tray and let it cool slightly. Meanwhile, the onion should be ready—let it cool a bit, then mix in the egg. Add salt and pepper to taste, and stir well. Transfer the mixture onto the dough in the tray. Top with goat cheese (you can crumble it and spread it evenly across the surface). I had some leftover dough, which I used to decorate the top.

Return the tray to the oven for about 20-25 minutes or until well browned.

You can serve it topped with sprouts (I used Alfalfa – lucerne sprouts) and a drizzle of balsamic vinegar reduction. Alternatively, it’s just as delicious on its own. 🙂
