Spicy vegetable wraps – Vegan

These colorful vegan wraps are filled with a mix of pan-fried vegetables, seasoned with wonderful spices. Wrapped in soft tortillas, they’re a quick, healthy, and satisfying option for lunch or dinner.

Ingredients: (for 4 servings)

  • 4 wraps
  • 350 g green beans
  • 4 medium carrots
  • 3 medium sweet peppers
  • sesame seeds
  • 50-60 ml soy sauce
  • 1 tsp cornstarch
  • 1 tbsp ground ginger (or a pinch of fresh)
  • 4-5 cloves garlic
  • 1 tsp fresh turmeric (or a tsp powdered)
  • 1 tsp sambal sauce (or a chopped chili pepper)
  • 2 tbsp coconut oil
  • 1 large onion
  • fresh coriander or parsley

Rinse and clean all the vegetables thoroughly. Cut the peppers into strips, slice the garlic, and quarter the onion before slicing it. Trim the ends of the pods and halve them if needed. Peel the turmeric and grate it finely. Peel the carrots and grate them using a coarse grater. If you’re using fresh chili peppers instead of sambal sauce, wash and finely chop them as well.

Boil the green beans in a pot with lightly salted water for 10–15 minutes, until tender yet still slightly crisp.

Meanwhile, heat coconut oil in a large wok. Once hot, add the sliced onion and sauté until slightly softened. Stir in the garlic, turmeric (fresh or ground), and chili pepper if using instead of sambal sauce. Cook for another 2–3 minutes, stirring occasionally.

Next, add the grated carrot, stir, and cook over medium heat for about 3 minutes. Add the pepper strips and continue cooking for another 3–5 minutes, stirring occasionally. Finally, add the pre-cooked and drained green beans, mix well, and let everything cook together for 4–5 minutes.

Add the soy sauce, ginger powder, and a teaspoon of sambal sauce. Stir well and cook for about 2 minutes. Then mix in the cornstarch, ensuring it’s fully incorporated. Finally, add the sesame seeds and the washed, chopped coriander. Give everything a final stir, then remove from heat.

Lightly toast the tortillas in a dry pan over medium heat, browning them on both sides without using any oil.

Divide the vegetable mixture into four portions, place one portion on each tortilla, roll them up like pancakes, and they’re ready to serve! 😊

If you like, you can sprinkle some crumbled feta cheese over the filling — it pairs beautifully with the flavors. 🙂
