

Enjoy a creamy and comforting vegan rice puree made with rich coconut milk and fresh fruit. This delicious and healthy dish is perfect for breakfast or brunch, offering a wonderful balance of flavors and nutrients. Naturally sweet, smooth, and satisfying, it’s a nourishing start to your day that will brighten your mornings and bring a smile to your taste buds. Simple to prepare and wonderfully wholesome, this coconut-infused rice puree is sure to become a favorite in your kitchen!
Ingredients:
- 1 cup of round rice
- 3 cups of coconut milk (use the same cup for measurements)
- 2 packets of vanilla sugar
- 1 teaspoon vanilla extract
- 1 banana
- A few apricots
- Blueberries
- Muesli
- Cow’s milk
- 3 tablespoons honey
- Maple syrup (optional – for serving)

Preparation:
In a pot, combine the rice with the 3 cups of coconut milk, vanilla sugar, and vanilla extract. Bring to a boil and let it simmer until the rice is soft and fully cooked.

Meanwhile, wash the apricots and slice them, peel the banana and cut it into slices. Prepare a blender or food processor. Once the rice is cooked, transfer it to the blender and add one cup of cow’s milk and the honey. Blend well, gradually adding more milk until the mixture reaches a smooth, pudding-like or puree consistency with a pleasant texture. Be careful not to add too much milk, as the mixture should be thick enough to support the fruit on top without them sinking.

Prepare the serving bowls for our rice puree. Start by adding 2 tablespoons of muesli at the bottom, then layer with the rice puree, followed by another layer of muesli, and top with a final layer of rice puree. Garnish the top with a sprinkle of muesli, banana slices, apricot slices, and blueberries. When serving, you can drizzle with maple syrup, add a little more honey, some jam, or enjoy it as is. Feel free to use any seasonal or available fruits you have at home.


Once we finish decorating them, we cover the bowls with plastic wrap and place them in the fridge. They taste delicious chilled. This dish is perfect for breakfast: its creamy texture keeps you full for a long time and gives you the energy to start your day strong 🙂 It also works wonderfully as a dessert and is sure to be equally enjoyed.
