
Let’s be honest: muffins don’t always have to be sweet. Sometimes you just want something cheesy, salty, and satisfying… and these savory muffins with feta-style cheese and olives are exactly that little bite of joy.
Perfect for breakfast on-the-go, a mid-day snack, or even as a crowd-pleasing party appetizer (yes, they pair beautifully with wine or beer), these muffins are the low-effort, high-reward recipe you didn’t know you needed.
The best part? They come together with just a handful of simple ingredients, no fancy equipment, and basically no stress. Just mix, pour, bake, and try not to eat half the batch while they’re still warm.
Whether you’re feeding guests, packing lunches, or just treating yourself, these muffins are a cheesy little slice of heaven.
Ingredients (for 12 muffins):
- Green and/or black olives
- 200 g cream cheese
- 230 g flour
- 1 packet of baking powder
- Fresh thyme, finely chopped
- 2 eggs
- 100 g grated Grana Padano
- 100 g feta-style cheese, cut into small cubes
- Black pepper
- 50 ml olive oil
- 100 ml milk

Preparation:
In a bowl, whisk together the eggs, olive oil, milk, and cream cheese until smooth. Add the grated Grana Padano and baking powder, and mix using a hand mixer or whisk. Gradually stir in the flour, chopped thyme, and a pinch of pepper, mixing until well combined.
Finally, gently fold in the olives and cubed feta cheese, setting a few pieces of each aside to sprinkle on top of the muffins before baking.

Preheat the oven to 180°C (350°F) and line a 12-cup muffin tray with paper liners. Spoon the batter evenly into the muffin cups, then top each one with the reserved olives and telemea cubes.

Bake in the preheated oven for 20–25 minutes, or until the muffins are golden and slightly crisp on top. They’re absolutely delicious served warm!

They can be stored in the fridge for a few days.
Just pop them in the microwave for about a minute before serving to enjoy them warm and fresh.

Noi am incercat reteta si au iesit foarte gustoase. Am pus mai mult lapte si aluatul a iesit mai moale si voluminos. Au stat mai mult la cuptor dar au fost OK. Multumim.
