Slightly spicy rice with vegetables and soy sauce – Vegetarian

This quick and flavorful rice dish is packed with colorful vegetables, a touch of heat, and the rich umami taste of soy sauce. Perfect as a light main or a hearty side, it’s an easy vegetarian recipe that brings comfort and bold flavor to your plate in just minutes!

Ingredients: (for 4 servings)

  • 300 g rice (I had red, you can use basmati, white, brown, whole wheat, etc.)
  • 1 zucchini
  • 3 medium carrots
  • 50 g butter (For the vegan version, use olive oil)
  • 1 pepper or bell pepper
  • 2 medium red onions
  • 50-60 ml classic soy sauce
  • 600 g mushrooms
  • 3 cloves of garlic
  • 2 green onions
  • 1 chili pepper
  • Fresh coriander for serving

Preparation:

Wash, clean, and prep the vegetables as follows: slice the carrots into even rounds; cut the zucchini lengthwise, then slice into half-moons; slice the mushrooms evenly; cut the bell pepper into strips, then into smaller pieces; slice the onion thinly; cut the green onion into rounds; slice the garlic; and finely chop the chili pepper.

Rinse the rice and cook it in a separate pot with lightly salted water.

Meanwhile, in a large wok, melt the butter. Once melted, add the onion and sauté until soft. Add the carrots and cook for a few minutes, or until they begin to soften. Stir in the paprika pepper and cook for about 2 more minutes. Then add the chili pepper and garlic, mix well, and let everything cook together for another minute.

Add the mushrooms, stir well, and cook over medium heat until most of the liquid they release has evaporated. Next, add the zucchini and cook for about 3 minutes, or until it begins to soften. At this point, add the cooked and drained rice along with the soy sauce. Mix everything thoroughly and let it cook for another 1–2 minutes.

Stir in the green onion, cook for one more minute, then remove from the heat. Taste and adjust with salt, pepper, or additional soy sauce as needed – I added a bit more when serving. 😊

Sprinkle with fresh chopped coriander on top. Serve as is or with your favorite steak.
