Sour chicken with vegetables – Asian style

A bold and tangy stir-fry featuring tender chicken and crisp vegetables in a vibrant sour sauce. Quick, flavorful, and perfect with rice or noodles for a satisfying Asian-inspired meal.

Ingredients: (for 2 servings)

  • 120 g basmati rice
  • 300 g chicken breast
  • 2 large tomatoes
  • 1 large onion
  • 1 piece of ginger
  • 1 clove of garlic
  • 100 g green beans
  • 2 bell peppers
  • 1 large carrot
  • 1 lime
  • 60 ml soy sauce
  • 100 ml of water
  • 1 tablespoon cornstarch
  • olive oil

Preparation:

Wash the peppers and slice them into strips. Peel the carrots, cut them into quarters, then slice each quarter and cut the slices into thin strips. Finely chop the onion. Dice the ginger into small cubes and slice the garlic evenly. Cut the tomatoes into small cubes. Rinse the green beans thoroughly. Finally, wash the chicken breast and slice it into evenly sized strips.

Start by making the sauce: In a small pot or kettle, whisk together the soy sauce, water, and 1 tablespoon of cornstarch using a fork. Heat the mixture over medium heat, stirring constantly until it begins to thicken. Once thickened, remove from the heat and set aside.

In a separate pot, bring 500-600 ml of salted water to a boil. Let it boil for 2-3 minutes, then turn off the heat. Add the rinsed rice, stir to combine, and cover with a lid. Let the rice sit for 15-20 minutes without lifting the lid, until it’s cooked through and slightly al dente. Once done, drain any excess water and set the rice aside, keeping it covered to retain warmth.

Heat the olive oil in a wok over medium-high heat. Once hot, add the chicken breast and cook until browned. Add the onion, ginger, and garlic, and sauté for 2-3 minutes until fragrant.

Next, add the peppers, beans, and carrots, and stir to combine. Cook over medium-high heat for about 5 minutes, covering with a lid and stirring occasionally. Then, add the tomatoes and sauce, mixing everything together. Cover the pot again and cook for another 5-7 minutes. Finally, squeeze the juice from the lime, stir well, and remove from the heat.

Season with salt and pepper if necessary.

Serve with rice.
