Spinach and cheese loaf – Vegetarian

This vegetarian Spinach and Cheese Loaf is a flavorful and satisfying dish inspired by the traditional Romanian “drob.” Packed with tender spinach, savory smoked and aged cheeses, and enriched with subtle hints of garlic and butter, it offers a perfect balance of textures and tastes. Baked to golden perfection with a crunchy sesame seed coating, this loaf makes a delightful appetizer or a wholesome breakfast that can be enjoyed warm or cold. Easy to prepare and full of comforting flavors, it’s sure to become a favorite in your kitchen!

Ingredients:

  • 3 large eggs
  • 2 medium onions
  • 150 g sheep’s milk cheese (or any aged cheese of your choice)
  • 150 g smoked cheese (like smoked Gouda or smoked cheddar)
  • 1 garlic clove
  • 100 g butter
  • 1 kg frozen spinach
  • 1 large cup of flour
  • 1 packet of baking powder
  • White and black sesame seeds

Preparation:
Peel and finely chop the onions, then sauté them in about 70 g of butter until soft and translucent. Add the spinach and the finely chopped garlic. Cook for about 8 minutes (if using frozen spinach, count the 8 minutes from the moment it’s fully thawed and heated through).

While the spinach mixture is cooking, cut the smoked cheese and the aged cheese into small cubes.

Generously grease a loaf pan with the remaining butter, then sprinkle white and black sesame seeds along the bottom and sides of the pan until it’s well coated.

Once the spinach mixture is ready, transfer it to a large mixing bowl. Add the eggs and mix well, then stir in the baking powder. Gradually add the flour, mixing until fully incorporated.

Finally, fold in the diced cheeses and season with salt and pepper to taste. Mix gently to avoid breaking up the cheese too much.

Pour the entire mixture into the prepared loaf pan.

Bake in a preheated oven at 160°C (320°F) for about 35-40 minutes, or until a toothpick inserted in the center comes out clean. This dish is perfect as an appetizer or a quick breakfast option, delicious served warm or cold.
