Ingredients: (for a 30/30 cm tray – 8 portions)
- 1 pack of ladyfinger biscuits
- 200 g mascarpone cheese
- 300 g strawberries
- 200 ml whipping cream
- 1 lime
- 30 g shelled pistachios
- 80 ml water
- 5 tablespoons of sugar

Preparation:
Wash the strawberries and remove the stems. Set aside 6 larger strawberries and slice them. Place the remaining strawberries in a bowl and blend them into a purée using a hand blender. Grate the lime zest and squeeze the juice into a separate bowl.

Add the sugar and water to the strawberry purée and mix well with a fork until combined. Leave aside.

In a separate bowl, combine the mascarpone with the whipping cream and mix well until the mixture thickens and forms a smooth, firm cream. Add the lime zest and gently fold it in using a spatula.

Prepare a suitable tray, then begin dipping the biscuits one by one into the strawberry sauce. Arrange them gradually in the tray until you create the first layer of biscuits. Pour a few extra spoonfuls of sauce evenly over the biscuits.

Add half of the mascarpone cream and spread it evenly over the first layer of biscuits. Continue by creating a second layer of biscuits, following the same process as before. Once all the biscuits have been added, pour any remaining strawberry sauce evenly over the second layer.

Add the remaining mascarpone cream and spread it evenly over the top. Finish by arranging the sliced strawberries and sprinkling with coarsely chopped pistachios.

Cover the dessert tightly with plastic wrap and refrigerate for at least 3–4 hours before serving.
