Craving something sweet but don’t want to deal with sugar, flour, or any of that baking nonsense? Say hello to this easy, no-bake, sugar-free snack!
Packed with chia seeds, coconut, and juicy prunes, this little treat is the perfect balance of chewy, sweet, and a little bit tropical. Plus, it’s vegan and healthy (but don’t worry, it’s still deliciously indulgent). The best part? You can make it in a flash – no oven required!
Whether you’re looking for a guilt-free snack, a post-workout bite, or something to satisfy your sweet tooth, these little balls of goodness have got you covered.
Ingredients:
- 200 g rehydrated prunes (if you prefer a sweeter taste, you can use dates – I like the tartness of the prunes)
- ~350 g shredded coconut
- 100 g chia seeds
- Maple syrup
- 200-250 ml coconut milk
- 1 vial of rum extract (or vanilla extract)

Preparation:
Soak the chia seeds in coconut milk and let them sit for about 1 to 1.5 hours. Then, blend the mixture in a food processor until it forms a smooth paste.

Once the chia seeds have fully absorbed the coconut milk, transfer them to a bowl and mix with about 250 g of coconut flakes, the extract, pureed prunes, and maple syrup to taste. Stir until a firm, compact paste forms. If the mixture is too soft, simply add more coconut flakes until you reach the desired consistency.

Place the remaining coconut flakes in a bowl. Using your hands, shape the mixture into balls and roll them in the coconut flakes until evenly coated.

Refrigerate them for about 30 minutes before serving. They’re absolutely delicious, packed with fiber, and totally guilt-free! 😀
