Vegetable goulash soup – Vegan

Made with just a handful of ingredients, it’s the perfect balance of comfort and flavor without any complicated steps.

It’s warm, hearty, and filled with those rich, smoky flavors you can’t resist. Plus, it’s completely plant-based, so you can feel good about what’s in your bowl (and how much time you’re saving). Whether you’re an everyday vegan or just craving a veggie-packed meal, this goulash soup is the kind of dish that turns a regular day into something special.

Toss in your veggies, let them simmer, and in no time, you’ve got a bowl of cozy, satisfying goodness. Serve it with a slice of crusty bread, and you’ve got yourself a meal that feels like a big, warm hug.

Ingredients: (for 4 servings)

  • 1 green bell pepper
  • 1 red bell pepper
  • 2 medium potatoes
  • 3 large tomatoes
  • 1 large onion
  • 70 g bouillon paste
  • 1 celery stalk
  • 1 carrot
  • 2 vegetable broth cubes
  • a few sprigs of fresh thyme
  • 2 cloves of garlic
  • 40 grams of rice
  • mix seasonings from: one tablespoon of sweet smoked paprika, one teaspoon of hot paprika, one teaspoon of garlic powder, one teaspoon of onion powder, one teaspoon of cumin, ground black pepper and salt to taste
  • a few tablespoons of olive oil
  • Fresh parsley for serving

Preparation:
Wash, peel, and chop the vegetables as needed: dice the potatoes and bell peppers, halve the carrots lengthwise and slice them, slice the onion, garlic, and celery, dice the tomatoes, and peel the thyme.

In a large pot or wok, heat the oil. Once hot, add the onion, celery, carrot, and garlic, and cook over high heat for about 4 minutes. Then, stir in the bell peppers, thyme leaves, and potatoes, and cook for another 2-3 minutes.

Next, add the rice, tomatoes, broth, spice mixture, and soup concentrate cubes. Stir everything well and cook together for 1-2 minutes. Add 1.5 liters of water, bring to a simmer, and let it cook over medium heat for about 20 minutes, stirring occasionally.

Once the soup is ready, turn off the heat, ladle it into bowls, sprinkle with freshly chopped parsley, and serve. Enjoy! 🙂
