
These hearty and flavorful galettes combine a delicious blend of sautéed onions, grated carrots, chickpeas, and red beans simmered with tomatoes, herbs, and spices. Wrapped in a flaky homemade or store-bought pizza dough, each galette is perfectly golden and brushed with egg for a beautiful finish. Ideal as a satisfying vegetarian main dish or a tasty snack, these galettes are easy to prepare and full of comforting, wholesome flavors that everyone will love.
Ingredients: (For 8 servings)
- 2 sheets of pizza dough
- 2 eggs
- 1 small can of chickpeas
- 1 can of red kidney beans
- 1 tablespoon sweet paprika
- 1 tablespoon dried thyme
- 1 bunch of fresh parsley
- 1 jar (800g) peeled tomatoes
- Salt and pepper
- 3 large tablespoons of tomato paste
- 7 medium onions, peeled and sliced
- 3 medium carrots, peeled and grated
If you prefer to make your own dough, you can prepare a simple dough using 1 kg of flour, 500-600 ml of warm water, 1 teaspoon of salt, 4 tablespoons of olive oil, and 2 packets of dry yeast. Mix the flour with the salt and yeast thoroughly, then gradually add the water and olive oil. You will get a smooth, slightly sticky dough. Transfer the dough to a bowl and let it rise until it doubles in size. After that, place it on a floured surface, roll it out with a rolling pin, and use it as desired.
If you have leftover dough, you can freeze it and reuse it later for pizza or other savory pies.
Preparation:
Sauté the chopped onions and grated carrots in a few tablespoons of oil. Add the drained chickpeas, drained beans, peeled tomatoes, tomato paste, and spices, and cook everything together. When the mixture is ready (after about 20 minutes), take one dough sheet and cut it into 4 pieces (repeat with both dough sheets).
Place the dough pieces directly on the baking tray, as it will be difficult to transfer the filled pastries later. Spoon about 2 tablespoons of the filling onto the center of each dough piece, then fold the edges inward to enclose the filling. Repeat this for all 8 pastries.
Beat the eggs and brush the edges of each pastry with the beaten egg. Sprinkle with pepper on top.
Bake in a preheated oven at 170°C (340°F) for about 30–40 minutes, or until the dough is golden brown and fully cooked.
