

Roasted cauliflower is one of my latest discoveries.
After eating it in a roasted variant in a Middle Eastern restaurant, I had a revelation about how versatile, tasty, and surprisingly good this vegetable can be if it is cooked creatively.
So I tried a version of cauliflower baked in the oven (similar to what I ate in the restaurant but in my own interpretation, plus the addition of cheddar cheese was extra because I had the cheese in the fridge 😊 ).
The recipe is simple and quick and does not require many ingredients.
For a vegan version, use oil instead of butter and leave out the cheese, or use vegan cheese.
Ingredients: (for 2-3 servings)
- ~ 1 kg cauliflower (I had 2 medium cauliflowers that together weighed around 1100 grams)
- 140 g butter
- 100 g grated cheddar cheese
- Spices mix: a spoon of smoked paprika (you can also use classic paprika), a teaspoon of salt, a teaspoon of pepper, a teaspoon of dried oregano, a teaspoon of dried rosemary, and a teaspoon of dried thyme
- some fresh parsley

Preparation:
Wash the cauliflower and cut it into equal slices, about 1.5 cm thickness.

Put the butter in a bowl and melt it in the microwave for 1-2 minutes. Mix the melted butter with the spices.

Turn on the oven and let it heat up to 220 degrees Celsius. Meanwhile, prepare a tray with baking paper.
To make the process easier, place the cauliflower slices on a cutting board and smear them on one side with the mixture of butter and spices.

Transfer them to the tray you prepared earlier, turn over on the other side, and smear that other side with butter and spices.

Put the pan in the oven for ~20-25 minutes, depending on your oven.

Take the tray out of the oven without turning it off, and sprinkle the grated cheese on top.
Return to the oven for another 2 minutes.
After it’s ready, transfer it to a plate and sprinkle the finely chopped parsley on top.
It’s delicious, but don’t take my word for it 🙂
