Couscous with vegetables – Vegan

This is a quick and flavorful recipe. You can combine it with some fried eggs or your favorite steak. It’s a very versatile recipe and gives you many combination possibilities.

Ingredients: (for 5-6 servings)

  • 250 g cous cous
  • 100 g raisins and dried apricots mix
  • 1 large bell pepper
  • 1 large onion
  • 2 cloves of garlic
  • 300 g mushrooms
  • 1 eggplant
  • 1 zucchini
  • sauce made from: 8 tablespoons tomato sauce, 2 tablespoons stock, a teaspoon of garlic powder, 4 tablespoons water, a teaspoon of sugar, a teaspoon of chili powder, a teaspoon of ground cumin, a teaspoon of turmeric, a teaspoon of dried coriander, 1/2 teaspoon of ground anise, a teaspoon of ground ginger, a teaspoon of dried mint, 1/2 teaspoon of cinnamon powder, a teaspoon of ground cardamom, 2 teaspoons of sweet paprika – mix everything in a bowl
  • a few sprigs of fresh coriander
  • 15 ml olive oil

Preparation:

In a separate pot, prepare the couscous according to the instructions. When it is ready, drain well and set aside.

Peel and cut the vegetables as follows: zucchini into cubes, onion into small-medium pieces, garlic into slices, eggplant into cubes, bell pepper into coarse pieces, mushrooms into quarters, and coriander into small pieces.

In a large wok, add the oil and when it is hot, add the onion and garlic to the pan and fry them. When the onion is soft, add the rest of the vegetables, mix well, put a lid on, and cook together for about 5 minutes, stirring periodically. Then add the raisin mixture, mix, put the lid back on and cook together until all the vegetables are done but still a little firm. (~ 10-15 minutes)

Add the cooked couscous and the sauce, mix well, and cook for about 3-5 minutes without a lid, stirring periodically. Turn off the heat and add the chopped coriander. Mix well and transfer to a serving bowl. Season with salt and pepper if necessary.

Serve as is or with a steak, meatballs, chicken, etc. It goes great with fried eggs.
