

Eggs in green pesto – breakfast full of flavor and aroma. You can use green pesto or red pesto; both have equally tasty results.
Ingredients: (for 2 portions)
- green pesto (4 teaspoons)
- 4 eggs
- 20 g butter
- sesame seads + pine nuts
- 1 big avocado
- blueberries
- cherry tomatoes
- small cucumbers
- salt + peper
- aceto balsamico
*You can pair the eggs with any vegetables you have in the fridge – peppers, zucchini stripes, carrots, celery sticks, etc, and of course, you can replace the blueberries with strawberries, raspberries, etc.

Preparation:
In a pan, put the butter, and when it has melted, add 4 teaspoons of green pesto in 4 places at equal distances. Using circular motions, flatten the pesto with a teaspoon.

Crack an egg over each teaspoon of pesto, sprinkle with pepper, put the lid on and let it cook for about 2-3 minutes.

Wash and cut the vegetables and blueberries, and put them on the plates. Sprinkle with aceto balsamico, pepper, salt, sesame seeds and pine nuts.
Add 2 eggs near the vegetables and blueberries, and you are ready for an amazing breakfast!
