Pasta with spinach and smoked salmon

Delicious, easy to make, full of aroma, and especially quick to prepare. 🙂

Ingredients: (for 4 servings)

  • 300 g pasta of your choice
  • 300 g grated parmesan or grana padano
  • ~750 g frozen spinach
  • 2 large onions
  • 4-5 cloves of garlic
  • 200 g of smoked salmon
  • salt + pepper
  • a few leaves of fresh basil
  • a little olive oil

Preparation:

Put enough water in a pot + a little salt, and boil the pasta according to the instructions. When they are ready, drain in a sieve and set aside.

Cut the onion into scales and cut the garlic into slices. The salmon is hand-broken into medium-sized pieces..

In a large wok, put enough oil to cover the bottom, and when the oil is hot, add the onion and garlic. Cook them on medium heat for about 4-5 minutes. Add the spinach, mix well, and cook for around 10 minutes or until it is well done and water/juice has evaporated.

Add the fish and the pre-cooked pasta. Mix well and cook for another 1-2 minutes. Turn off the heat and add 200 grams of grated cheese and 2/3 of the salmon. Mix everything well together.

Add salt and pepper.

Transfer to a plate and garnish with the remaining salmon and basil leaves. Put the rest of the remaining cheese on the side for serving.

Serve warm with extra cheese sprinkled on top.
