Rice with mixed mushrooms and turmeric – Vegetarian

This vibrant, comforting dish brings together the deep, earthy flavors of mixed mushrooms with the warm, golden glow of turmeric. Perfectly seasoned and naturally vegetarian, this rice recipe is simple to make yet rich in flavor and nutrients. The mushrooms add a satisfying, meaty texture, while turmeric not only enhances the color but also brings subtle spice and health-boosting properties.

Ingredients: (for 2 servings)

  • 150 g basmati rice (or your favorite)
  • 400 g mixed mushrooms
  • 4-5 cloves garlic
  • 1 sprig rosemary
  • 1 sprig thyme
  • 50 g butter (for vegan version, use olive oil)
  • 1 piece of fresh turmeric (or a tablespoon of turmeric powder)
  • 1 large onion
  • 50 ml soy sauce
  • pepper

Preparation:

Begin by cooking the rice according to the package instructions. Once done, drain any excess water and set the rice aside.

Next, peel and grate the fresh turmeric—tip: wearing gloves is a good idea, as turmeric can stain your hands quite easily. Wash the mushrooms thoroughly and slice them to your preferred size. Peel the onion, cut it into quarters, then slice thinly. Finally, peel and slice the garlic cloves.

In a wok or large skillet, melt the butter over medium heat. Once melted, add the sliced onion and sauté until it begins to soften. Stir in the thyme, rosemary, grated turmeric, and garlic, and cook for another 1–2 minutes to release their aromas.

Add the mushrooms and continue to cook over medium heat, stirring occasionally, until most of the liquid has evaporated. Finally, add the cooked rice, mix well, and season with soy sauce and freshly ground pepper. Cook for another minute to bring all the flavors together.

Serve it on its own as a flavorful vegetarian main dish, or pair it with your favorite steak as a hearty side. 🙂
