Vegetable pie – Vegetarian

This vegetable pie is pure comfort in every bite!

Packed with tender leeks, earthy mushrooms, sweet carrots, and melty cheese in a rich cooking cream, all wrapped in a golden, flaky puff pastry, it’s vegetarian, hearty, and totally irresistible. Perfect for a cosy lunch, a family dinner, or just whenever you crave something warm and satisfying.

Ingrediente: (pentru 4 portii / o tava de 24 cm diametru)

  • 1 sheet of puff pastry
  • 1 leek
  • 3 garlic cloves
  • 1 bay leaf
  • 1 large carrot
  • 250 g mushrooms
  • 1 stock cube
  • 3 tablespoons flour
  • 300 ml boiling water
  • 30 g butter
  • 1 level tablespoon dried thyme
  • 50 g grated cheese
  • 2 red onions
  • 150 ml cooking cream
  • Salt and pepper

Preparation:

Preheat the oven to 220°C (428°F) and let it warm up.

Place the stock cube in a bowl and pour the hot water over it. Stir and set aside.

Wash, peel, and chop the vegetables: slice the mushrooms, cut the carrot into small cubes, finely chop the onion, and slice the leek evenly. Peel the garlic and press it through a garlic press.

In a large, deep skillet, melt the butter. Once melted, add the onion and garlic and sauté for about 2 minutes. Then add the carrot, leek, mushrooms, and thyme, stirring well. Cover with a lid and cook for another 5 minutes, stirring occasionally.

In the bowl with the prepared stock, add the flour and whisk well with a fork until smooth and lump-free. Pour this mixture into the skillet with the vegetables, add the bay leaf and cooking cream, stir thoroughly, and cook over medium heat for about 5 minutes, stirring occasionally.

While the vegetables finish cooking, prepare the puff pastry and the baking dish. Using the dish as a guide, press the pastry and cut out two pieces that fit the shape of the dish.

Next, line the baking dish with parchment paper and place one piece of the pastry on the bottom. Pour the vegetable mixture into the dish and sprinkle the grated cheese evenly on top.

Lightly score or cut a few small slits into the second sheet of puff pastry, then place it carefully over the vegetable filling.

Bake for about 20 minutes, or until the pie is beautifully golden. Remove it from the oven and let it cool for 10 minutes before slicing and serving. It’s delicious on its own or paired with a fresh salad.
