
This pasta with tomatoes, eggplant, and feta cheese is a vibrant, Mediterranean-inspired dish full of fresh flavors! Tender pasta is paired with roasted eggplant, juicy tomatoes, and creamy feta cheese, creating a perfect balance of savory, tangy, and rich tastes. It’s a deliciously satisfying vegetarian meal that’s easy to prepare and sure to impress!
Ingredients: (For 4-5 servings)
- 280-300 g pasta
- 2 large eggplants
- 400 g diced tomatoes in sauce (from a can)
- 3 large tomatoes
- 2 large onions
- 200 g coarsely crumbledfeta cheese
- 70 g gouda (or any other “melting” cheese)
- 4-5 cloves of garlic
- a handful of fresh basil
- 50 ml olive oil
- salt + pepper

Preparation:
Cook the pasta according to the instructions, and when ready, drain in a sieve and set aside. While the pasta is cooking, prepare the rest of the ingredients. Cut the washed eggplants in half lengthwise, then into equal slices and cut the slices into equal strips.

Cut the onion finely, the garlic into slices, and the tomatoes into cubes. Grate the Gouda cheese and crumble the feta cheese into coarse pieces by hand.

In a large wok, heat about 40 ml of oil, and when it is hot, add the eggplants. Fry them over medium heat until they start to brown, for about 8-10 minutes, stirring occasionally. When they are done, remove them with a slotted spoon, drain well and place in a bowl, setting aside for the moment.

In the same wok, add the remaining oil, and when it is hot, add the onion and garlic and cook until the onion starts to soften, then add the tomatoes and cook together for about a minute. Add the canned tomatoes, mix well and let them cook over medium heat for about 7 minutes, stirring periodically. Add the cooked pasta, mix well, and let it cook for another 2-3 minutes.

Add the eggplants, mix well, and cook for about 1 minute. Then add the basil leaves and the telemeua and turn off the heat. Mix everything well.

Meanwhile, preheat the oven to 200 degrees and let it heat up. Transfer the pasta to a tray, season with salt and pepper if necessary, top with grated Gouda cheese, and bake in the preheated oven for 25-30 minutes or until the cheese is nicely browned on top.

When they are ready, take them out and let them cool for 2-3 minutes before serving.
