Pasta with tuna, mushrooms and green onions

Delicious pasta, with a fresh and full taste, easy to make, for happy tummies 🙂

Ingredients: (for 4 servings)

  • 3 medium onions
  • 2 bell peppers
  • 3 green onions
  • 6 cloves of garlic
  • 200 g canned tuna (after draining)
  • 250 g pasta
  • 50 g butter
  • 400 g tomatoes in sauce (canned)
  • 400 g mushrooms
  • a handful of black olives
  • a spoonful of dried oregano
  • a few sprigs of fresh basil
  • salt + pepper

Preparation:

Clean the onion and cut it into small pieces. Peel off the garlic and cut it into slices, cut the green onion into small pieces, cut the mushrooms in half and then into equal slices, cut the bell pepper into strips, and drain the juice from the tuna.

Cook the pasta according to the instructions and when ready, drain in a colander, keeping a little of the water in which they were cooked, in case they turn out to be too dry after mixing with the sauce.

Put the butter in a pan and when it has melted, add the onion, and saute for a few minutes until it starts to soften. Then add the garlic, mix well, and after a minute add the bell pepper and cook together for 3 minutes. Add the canned tomatoes, dried oregano, pepper, and a little salt, and mix well. Cook for about 4 minutes.

Add the cut mushrooms, put a lid on, and let it cook on medium heat for about 5 minutes. Add the olives, mix well, put the lid back on, and let it cook for another ~5 minutes. Add the green onion, mix well, and cook for about another minute, then turn off the heat and add the previously cooked pasta.

Mix well and transfer to a bowl. Sprinkle the drained tuna on top, a little pepper, salt if needed, and fresh basil leaves.
