


Let’s talk about sweet potatoes: the cozy, caramelized comfort food we all secretly wish we could eat every day. Now imagine them roasted to perfection, topped with a swirl of butter and a punchy, nutty pistachio pesto. Yep, it’s as dreamy as it sounds. This combo is a little unexpected, but trust me, it’s a total flavour bomb.
It’s the kind of dish that works for lunch, dinner, or fancy meal prep goals.
It’s vegetarian, ridiculously easy, and looks like something you’d order at a trendy café.
Ingredients: (for 6 servings)
- 6 medium sweet potatoes (~1 kg)
- 10 sprigs of fresh basil (a generous handful)
- 7–8 garlic cloves
- 30 ml olive oil
- 200 g Grana Padano or Parmesan
- A bowl of roasted pistachios (~100 g)
- 70 g butter

Preparation:
Preheat the oven to 200°C. Meanwhile, wash the sweet potatoes thoroughly, then pierce them several times with a knife. Place them on a baking tray. Once the oven is hot, bake the potatoes for 40–50 minutes (or up to an hour), until they’re tender and a knife slides in easily.

While the sweet potatoes are baking, prepare the pesto. Rinse the basil leaves with warm water and place them in a food processor. Finely grate the cheese and add it to the basil, followed by the peeled garlic cloves, shelled pistachios, olive oil, and a pinch of pepper. Blend everything until it forms a smooth, flavorful paste.mixam pana cand obtinem o pasta.

Once the sweet potatoes are done, take them out of the oven. To serve, place one on a plate and slice it open down the middle, without cutting all the way through. In the center, add a teaspoon of butter and spread it gently over the warm flesh until it melts. Top generously with the pistachio pesto.
Finish with a touch of freshly ground pepper, if you like.
