
A unique combination of ingredients and flavours, absolutely delicious, ultra quick, and easy to prepare. 🙂
Ingredients: (For 4 servings)
- 250 g tagliatelle
- a large handful of walnuts (40-50 g)
- 50 g rucola
- 40 g butter
- 200 g green pesto
- grated peel from a lemon
- 200 g feta
- 2 large sweet potatoes (~350 g)
- a few leaves of fresh basil

Preparation:
Boil the pasta according to the instructions.
Save a little water from the pasta, you may need it when mixing the pasta with other ingredients if the food feels too dry.
Brown the walnuts in a pan without using oil.
Peel the sweet potatoes and brown them in a pan while the pasta is cooking. Add the butter, and when it is melted, add the potatoes cut into medium cubes. Add salt and pepper and brown for a few minutes until they soften.

When the pasta is cooked, put it in a bowl together with rucola, grated lemon peel, and pesto and mix well. You can also add half a cup of the water in which the pasta is boiled if you think they are too dry. Mix well and transfer to a plate.

Sprinkle on top pieces of feta, the walnuts, and the potatoes you cooked earlier. Add some fresh basil leaves on top, season with salt and pepper, and that’s it 🙂
