

This rice recipe is delicious, easy to prepare, full of flavours, and vegan.
We had it with grilled sausages, but you can eat it in whatever combinations you want. 🙂
Ingredients: (For 6 servings)
- 300 g rice (I had red rice; you can use whatever you like)
- 1large bell pepper
- 1 large onion
- 300 g green beans
- grated peel from a lemon
- 2 cubes of vegetable flavor soup concentrate
- 20 ml sunflower oil
- 2 large carrots
- 2 cloves of garlic
- salt and pepper
- fresh parsley for serving

Preparation:
Wash the rice under running water and let it drain.
Cut the green beans into small pieces.
Clean the carrots, cut them in half lengthwise, and then into equal slices.
Finely chop the onion.
Peel the garlic and cut into slices.
Cut the pepper into 4 lengthways and then into equal slices.

In a large pot, add the oil, and when it has heated up, add the onion and sauté for 2-3 minutes or until it starts to soften. Then add the carrots and garlic and sauté for about 3 minutes. Add the rice and fry it together with the vegetables for 2-3 minutes, stirring often.

Add the pepper and the green beans and mix well. Add the soup concentrate cubes and enough water to cover the vegetables and rice, mix well, and let it cook for ~15 minutes or until your rice is cooked (red rice boils more difficult, you may need less cooking time if you use a different type of rice).
Stop the heat.
Add the grated lemon peel, salt, and pepper to taste and mix well. Put the lid on and let it “rest” for 15 minutes with the lid on.

If necessary after those 15 minutes of “rest”, drain the excess water before serving. Serve with fresh parsley sprinkled on top, along with anything you like.
