

A cake with a moist texture, full of taste, healthy, and easy to prepare.
Ingredients: (for a 26 cm diameter tray – 12 servings)
- 400 g flour
- 4 very well ripe large bananas
- 250 g frozen raspberries
- 250 g frozen blueberries
- vanilla essence
- 60 ml maple syrup
- 15 g baking powder
- 50 g melted butter
- 4 eggs

Preparation:
In a bowl, mix the bananas with the maple syrup until they are well mashed. Leave it aside.

Turn on the oven to 180 degrees and let it heat up. In another bowl, mix the eggs, flour, baking powder, vanilla essence, and melted butter. Mix well until the ingredients are well combined. Add the banana puree on top and mix again. In the end, add the frozen fruit and mix gently with a spatula – do not mix anymore.

Prepare a tray with a removable bottom and add baking paper. Pour the mixture into the pan. Put in the preheated oven for about 45-50 minutes or until it passes the toothpick test.

Let it cool down. Optionally, you can sprinkle a little sugar on top.

It can be served with coffee, tea, or a scoop of ice cream. This dessert is not very sweet, it is a healthy version of cake, but it is delicious and easy to prepare. 🙂 Because it has no added sugar and contains many fruits, it is suitable for children or for those who have a sugar-free diet.
